SCIENTIFIC NAME:   Laurus nobilis

DESCRIPTION / PART USED:   Harvest the leaves as needed once the tree is established. This is one herb that's better dried than fresh, as the fresh leaves are bitter.



If you cook with whole bay leaf, be sure to remove it before eating the food. The leaf can’t be digested, so it remains intact while passing through the digestive system. This means it can become lodged in the throat or pierce the lining of the intestines.  Some people develop an allergic rash when they touch sweet bay. If you have this problem, avoid sweet bay.  Not enough is known about the use of sweet bay during pregnancy and breast-feeding. Stay on the safe side and avoid use.  Stop using sweet bay at least 2 weeks before a scheduled surgery.
